3 cups long grain rice
1/8 cup oil
6 oz. tomato paste
1 1/2 tsp. Salt
2-3 cloves minced garlic
1/2 cup diced onions
6 cups of water, chicken broth, or veggie broth
Dash cumin and pepper
Chopped Peppers (optional)
Spanish rice is not actually Spanish. The Spanish were known to have brought the tomato from the new world back to Europe. Their use in Spain became so ubiquitous that people elsewhere started referring to dishes that included them as Spanish.
Put your oil, rice, onions, peppers if using, and garlic in a pan. Cook until rice is lightly browned. Stirring frequently. Add the tomato paste and cook for 1-2 minutes, continue to stir frequently.
Add broth and seasonings and stir together. Bring just to a boil, put the lid on, turn the heat to low, and cook for 15-20 minutes.
